Transcript:How to Make Custard Rice Pudding
Ingredients for Custard Rice PuddingTo make custard rice pudding, you will need:
- 1 cup of cooked white rice
- 3 eggs
- 1/2 cup of sugar
- 1/4 teaspoon of salt
- 1 teaspoon of vanilla extract
- 1 teaspoon of fresh lemon zest
- 1/2 cup of raisins
- 3-1/2 cups of milk
- And 1/2 tsp ground nutmeg, fresh if possible
Instructions for Making Custard Rice PuddingBegin by preheating the oven to 300 degrees Fahrenheit. Spray a 2-quart baking dish with nonstick cooking spray or rub it with butter lightly all around the inside. In a large mixing bowl, combine the eggs and whisk until they are lightly beaten. Add the sugar, the salt, the vanilla extract, the lemon zest, and the milk, and whisk them together until they're well-combined. Stir in the raisins and the cooked white rice and stir until everything is well-mixed.
Pour the rice pudding into the prepared pan. Place the dish in a larger baking pan and pour hot water inside the baking pan until it comes about halfway up the sides of the rice pudding dish. Right before you place it in the oven, sprinkle ground nutmeg on top or grate fresh nutmeg over the top of the rice pudding. Place the pudding in the oven and bake it at 300 degrees for about an hour and a half. When it is finished, the pudding will be set but still jiggly, like Jell-o, when you move the pan. It will have a golden color on top that is set when you tap it, and a thin knife inserted in the center comes out clean.
Let the rice pudding cool a bit, then serve it warm or chilled. It is delicious on its own and also good with a topping of whipped cream.
