Hi I'm Chef William Richards for about.comHere's a flavorful Chicken Fricassee with rice that'll melt in your mouth after cooking all day in your crockpot. The ingredients for this Crockpot Chicken Fricassee recipe come from About.com's Southern Food site.

Ingredients for Crockpot Chicken Fricassee

Here's what you'll need:

  • 4 boneless, skinless chicken breasts
  • 1 can of cream of chicken soup. We're using a low-salt healthy version
  • 1/4 cup water
  • 1/2 cup chopped onions
  • 1 teaspoon lemon juice
  • 1 teaspoon ground paprika
  • 1 teaspoon rosemary leaves
  • 1 teaspoon thyme
  • 1 teaspoon dried parsley flakes
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups of cooked white rice
  • Non-stick cooking spray

Instructions for Making Crockpot Chicken Fricassee

Rinse your chicken breasts thoroughly on both sides then dry on a paper towel on a clean plate. Clean chicken is important to avoid salmonella poisoning. Trim any excess fat with a sharp knife. Now let's make our sauce. Combine soup, water, onions, lemon juice and all the seasonings and mix thoroughly. In the crockpot, spray a generous amount of non-sticking cooking spray on the bottom. Then layer the chicken and pour the sauce on top. Cover and cook on low for up to 8 hours.

You can cook this recipe on high for 4 hours but the slower the cooking the more tender and tastier the results. Your chicken's juices should run clear with no pink in the center. Pour some of the Fricassee sauce over the white rice then add your chicken breast on top. Pour more sauce over the chicken then serve hot with a crispy green salad.
