Ingredients for Crockpot Beef Stew

To make this beef stew, you will need:
2 tbsp vegetable oil
3/4 cup + 3 tbsp flour
1 tsp garlic powder
1-1/2 tsp paprika
2 lbs lean stew beef, diced into 1-inch pieces
1 onion, chopped
1 clove garlic, minced
2-3 cups beef broth
1 tsp salt
1 tbsp lemon juice
1 tsp sugar
1 tsp Worcestershire sauce
1/2 tsp black pepper
2 bay leaves
6 small carrots, peeled and chopped
6 small potatoes, chopped
1/3 cup cold water

Prepare the Beef

First, prepare the beef. Combine 3/4 cup of flour, the garlic powder, and 1 tsp of paprika in a large plastic zip-top bag. Mix the contents together, then add the diced beef. Seal the top of the bag and shake it around until all of the beef is well-coated with the flour mixture. Place a large skillet over medium heat and add the vegetable oil. Once the oil is hot, add the beef and cook it until it is browned on the bottom. Stir the pieces, and continue cooking until the beef is crispy and browned on all sides. It probably won't be cooked through the middle, but that's okay because the crockpot will finish the cooking process. Once the meat is cooked, transfer it to your crockpot.

Add Ingredients to Crockpot

Add the chopped onion, the minced garlic clove, 2 cups of beef broth, the salt, the lemon juice, the sugar, the remaining 1/2 tsp of paprika, the black pepper, the Worcestershire sauce, the bay leaves, the carrots, and the potatoes. Stir everything together, cover the crockpot with a lid, and cook the stew on low for 6-8 hours. Stir the stew periodically, about every 2-3 hours.

Gradually the vegetables will cook down and become more tender. If, after several hours, you decide you would like your stew a little soupier, add an additional cup of beef broth and continue to cook the stew. About 30 minutes before serving, mix together the remaining 3 tablespoons of flour and the cold water, and stir until there are no lumps. Pour this mixture into the crockpot and turn the heat to high. Cook until the stew thickens. The stew is finished when the vegetables can be easily pierced with a fork. Just before serving, make sure to remove the bay leaves so they're not accidentally eaten. This stew is a warm and hearty comfort food that makes a satisfying and filling meal anytime.
