Hi, I'm Barbara Jean for About.com. Stuffed Peppers can work as a side dish or as a meal. Here's a quick and easy Stuffed Pepper recipe that's spiced up a bit with Creole seasoning.What Is Creole?
Creole is a slightly spicy blend, made up of a combination of seasonings including:- paprika
- cayenne powder
- oregano
- thyme
- onion powder
- and salt and pepper
Ingredients for Creole Stuffed Peppers
Here's what you'll need for your Creole Stuffed Peppers:- 3 large green bell peppers
- 3 tomatoes, peeled and coarsely chopped
- 6 slices of bacon
- 1 teaspoon of chopped onion
- 1 cup cooked rice1 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 tsp Creole seasoning
- 1/2 to 3/4 cup hot water
- As an option for cheese lovers, you can add ½ cup of shredded cheddar or any other flavored cheese
Instructions for Making Creole Stuffed Peppers
First preheat your oven to 350 degrees. Fry the bacon and onions together until crispy, drain most of the fat and return about 1 tbsp into the fry pan. Then add tomatoes. Blend in the rest of the ingredients including the cooked rice, Creole Seasoning, salt and pepper. Cut your peppers lengthwise and remove the seeds. Fill them with your rice mixture and sprinkle grated cheese – we're using cheddar - on top if you'd like. Add hot water to your dish than cover and bake for 15 minutes. And there you have it.
