Transcript:How to Make Cream of Cauliflower Soup
Hi, my name is Aubrey for About.com and today I am going to teach you how to make cauliflower soup.Ingredients for the Cream of Cauliflower Soup
You will need:- 1 large cauliflower
- 3 tablespoons of butter
- 1 medium onion that is finely chopped
- 3 tablespoons of flour
- 3 cups of milk
- 1 cup of sour cream or plain yogurt
- 3 vegetable bouillon cubes
- chopped parsley for garnish
- Parmesan cheese
Cut and Cook the Cauliflower for the Cream of Cauliflower Soup
First, rinse the cauliflower. Peel and cut leaves off the bottom by pulling them down and cutting off any extra leaves. Take a knife and split the cauliflower into two halves. Cut both halves down the center. This will give you four quarters.Take each piece and slice the thick part of the core off. You can discard these pieces or keep to boil. Take each of these pieces and just pull the florets apart. Steam or boil the cauliflower.
Make the Cream of Cauliflower Soup
Chop up one onion. Cut small fine pieces. Saute the onion with butter in a frying pan. Once the onions are softened add flour to your mix. Stir while cooking to blend the flour. Add three cups of milk and sour cream. You could add plain yogurt if you want a healthier choice.Stir or whisk until you get a thick mixture. Drain the cauliflower and blend in a blender or food processor until you get a smooth texture. If you want a lighter texture you can blend milk with the cauliflower.
Add the cauliflower to the onion mix and heat it up on low heat. Add three vegetable bouillon cubes and salt and pepper for taste. You can add any additional spices if you want to add more flavor. Chop some parsley and sprinkle it on top with Parmesan cheese and enjoy.
