Transcript:How to Make Crab-Stuffed MushroomsHi, this is Jesse Rosado for About.com, and today, we're going to be talking about how to make crab-stuffed mushrooms.
Crab-Stuffed Mushroom IngredientsSo we have some ingredients here for our crab-stuffed mushrooms. We have:
- Stuffing mushrooms
- Old Bay seasoning
- Crab meat
- Salt and pepper
- Cayenne pepper
- Bell pepper
- Thyme and parsley
Prepare Mushrooms for StuffingSo we have our stuffing mushrooms here. I'm just going to go ahead and dip them in some water, make sure it's nice and clean. And to avoid mushy mushrooms, we're going to pat them dry with a paper towel. Now that we've washed and dried our mushrooms and have the stems out, I'm going to take out this inner rind which sits under the mushroom cap and is really dark in color - and we don't want that color to bleed out into our stuffing mix.
Prepare Mirapoix for StuffingNow, we're going to start prepping our mirapoix for the stuffing. Mirapoix is basically 50% onion, 25% carrot and 25% celery. This is a classic base in many French recipes. So now we're going to add a little thyme and a little parsley. And now I'm going to chop up these mushroom stems so we have a nice mushroom flavor in the background of our stuffing. And we'll add a little chopped up pepper for some flavor and some color. We have some sliced sandwich bread here which we're going to use for the body of our stuffing. We'll just coat the mushroom cap on the outside with a nice coating of butter and we're going to put them into the baking dish and get them ready for our crab-stuffed mushrooms. Now that we have our ingredients ready, we're going to go start build our stuffing. That starts by sautéing the vegetables. And we're just going to sauté these for eight to nine minutes. So we've got to a good spot here with the pan. Our onions are looking nice and translucent, our vegetables are soft, and now is a good time to deglaze the pan. I'm going to use a little of the crab juice to do that. So I just dropped in the bread crumbs into the mirapoix that's been deglazed with the crab meat juices there, and now I'm going to cover so that those crab meat juices will steam inside there, and infuse those bread crumbs with that crab flavor. Our stuffing is done here. I'm just going to go ahead and pour it into this dish.
Prepare Crab Meat and Bake Crab-Stuffed MushroomsThe next step is to put in the crab meat. I've got some nice cooled-down stuffing here. This is drained, wild-caught, ready-to-eat crab meat. I'm just going to scrape it into the bowl here. So we'll sprinkle it with a little bit of this Old Bay seasoning - probably about a teaspoon, maybe a little more. So now that our stuffing is seasoned and well-folded in, we'll go ahead and stuff the mushrooms. Push it down - we want to stuff it nice and high. Now our mushrooms are just about ready to go into the oven. Just as a final touch, I'm going to sprinkle a little fresh grated parmesan on each one. So here we go! A nice tray of stuffed mushrooms. They go into the oven at 350, and we'll be baking them for about 25 minutes.
