Hi, I'm Nadia Chapman and I'm here for About.com. Today, I'm making a crab quiche, using a recipe from About.com's Southern Food site. If you are like me, and are not familiar with cooking with crab, you will love this recipe! This easy-to-make crab quiche is good whether it's made from fresh or canned crab.

Crab Quiche Ingredients

Here's what you will need for this recipe:
  • 1 (9 inch) pastry shell that you will partially bake prior to baking your quiche
  • 1 tablespoon of butter
  • 2 tablespoons of minced shallots
  • 1 cup of crabmeat (fresh or canned)
  • 1 tablespoon of flour
  • 1 1/2 cups of shredded Swiss cheese
  • 3 eggs
  • 1 cup of half and half
  • 1/2 teaspoon of salt
  • Dash of pepper, or hot pepper sauce
  • Dash of nutmeg
  • Minced parsley

Cooking the Crab Quiche

Have a 9-inch pastry shell partially baked. Sauté shallots in butter until tender, about 2 minutes; mix with crabmeat and flour; and set aside. Sprinkle 3/4 cup of cheese in the pie shell, then spread with crab mixture, and sprinkle with the remaining cheese. Beat the eggs, cream, salt, pepper, nutmeg, and parsley until mixed. Pour into shell. Bake for 25 to 30 minutes at 350 degrees. If the top is browning too quickly, cover with aluminum foil. This dish serves between 6 and 8 people. If you want, you can add another cup of crab, substitute Swiss cheese for white cheddar, and you can also add chopped asparagus, leek or artichoke, if you feel like it.
