Transcript:How to Make Corned Beef Cabbage Rolls

Hi, I’m Scott for About.com. Today, I’m going to show you how to make corned beef and cabbage rolls using a recipe from southernfood.about.com.

Ingredients for Corn Beef Cabbage Rolls:

  • 1 large head of cabbage
  • 3 cups of diced, cooked corned beef
  • 3 cups of diced, cooked potatoes
  • 1 teaspoon dried thyme
  • a dash of black pepper
  • 1/2 a teaspoon of salt
  • 1 large egg, slightly beaten
  • 1 cup of beef broth
  • 2 tablespoons of butter
  • 2 tablespoons of flour
  • 1 cup of milk
  • 1 cup of shredded cheddar
  • salt and pepper to taste

To begin, preheat your oven to 350°. Now take your cabbage and separate the leaves. Place the leaves in a large pot. Pour a small amount of water into the pot. Then, cover the pot and bring the water to a slight boil- to allow the leaves to steam slightly. Steam them until they are slightly wilted and flexible. Next, Add the corned beef to a large bowl. Then pour in the potatoes. Add the thyme. Sprinkle with salt. Add the pepper. Finally Add the egg. Now blend the mixture well.

Roll Corned Beef in Cabbage

Next take out a large baking dish and set the cabbage leaves inside. After, roll a portion of the mixture into a small ball that will fit into the cabbage leaf. Center the mixture in the middle of a cabbage leaf. Fold the sides of the cabbage around the corned beef. Now roll up leaf around the corned beef. Continue this process with the remaining ingredients and leaves. Before baking, pour the beef broth over the cabbage. Cover the baking dish with a lid or aluminum foil. Bake at 350° for 30 to 40 minutes.

Simmer the Corn Beef Cabbage Roll Sauce

While the cabbage rolls are baking, prepare the sauce. Add 2 tablespoons of butter to a sauce pan and melt over medium heat. Add the flour. Now stir until the mixture is fully blended. Pour in the milk. Stir well. Keep simmering and stirring until the mixture thickens. Now sprinkle in the cheese. Keep cooking until the cheese is melted and the mixture is smooth. Next, add salt to taste. Then add pepper, to taste. Finally, Drizzle the cheese sauce over the cabbage rolls before serving.
