Hi, I'm Matt Becht for About.com and today we're making chicken tortilla soup.Chicken Tortilla Soup Ingredients
For this recipe, you will need the following ingredients:- 1/4 bunch of cilantro
- 2-3 garlic cloves
- 1/2 small onion, chopped
- 1 small can of green chilies
- 6 cups chicken stock or broth
- 1 14.5 ounce can of tomatoes
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 10 small corn tortillas cut into thin strips
- Vegetable oil
- 1-1/2 cups cooked chicken
Cooking the Chicken Tortilla Soup
This recipe makes 6 servings. First, heat the chicken stock or broth in a large pot. As the pot comes to a boil, use a blender or food processor to puree your cilantro, garlic, onion, chilies, and tomatoes. When ready, pour the puree mixture into the boiling pot and stir. Next, add the cumin and salt to your soup and reduce the heat to a simmer. Cover the pot and let the soup cook for 1 hour, stirring occasionally. If you want a thicker consistency, you can dissolve two tablespoons of cornstarch with ¼ cup of water, and add it to the soup. Or leave it out for a thinner consistency. Next take a frying pan and heat it with a splash of vegetable oil spread over the pan. Place your cut tortilla strips over the oil and fry until crisp. Remove the tortillas from the pan quickly before they burn, and dry them on a paper towel. With about 15 minutes left on the timer, you can add the cooked chicken pieces to the soup. After the full hour, you can turn off the heat, pour a bowl, and serve with a garnish of the crispy tortilla strips.
