Transcript:How to Make Cheesy Potato Skins

Hi, I'm Jen D'Amore for About.com, and this video is all about how to make cheesy potato skins using a recipe from About.com's Southern Food site.

Cheesy Potato Skin Ingredients

You'll need:
  • 3 large baking potatoes
  • 1/4 cup shredded pepper jack cheese
  • 1/3 cup shredded mozzarella cheese
  • Green onions
  • Seasonings

Prepare Potatoes and Add Cheese

When choosing potatoes, look for potatoes with more starch, like Russet, Idaho, and Goldrush. Wash the potatoes and lightly coat with oil. Use a fork to poke holes about an inch apart all around each potato. Preheat the oven to 400 degrees, and bake for 40 minutes. When the potatoes are cool enough to handle, cut in halve length-wise. Use a spoon to dig down into and scoop out most of the insides, leaving enough shell to retain its shape. Combine the shredded cheeses and divide them among the potato halves. Then, put them under the broiler until the cheese melts.

Season Potato Skins

Cut each skin in half again. Chop the green onions and sprinkle on top, with the seasonings of your choice. Some popular choices are lemon pepper, dill, rosemary or oregano, and of course salt and pepper. To add some heat, try red pepper flakes. Serve with sour cream. For a delicious Greek-flavored variation, change the cheese to feta and season with thyme and oregano.
