This broccoli souffle is baked with eggs and butter and seasonings.

Broccoli Souffle Ingredients


  • 2-1/2 cups fresh chopped broccoli, about 12 ounces
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup milk (350 ml)
  • 4 egg yolks
  • 1 teaspoon lemon juice
  • 1/8 teaspoon nutmeg
  • 4 egg whites
  • 1/4 teaspoon cream of tartar

Baking the Broccoli Souffle

Preparation: In a covered pan, cook fresh chopped broccoli in boiling salted water for 8 to 10 minutes. Drain well. Chop any large pieces and set aside. In a saucepan, melt butter over medium-low heat; add in flour, salt, and pepper until smooth and bubbly. Gradually add milk. Continue cooking, stirring constantly, until sauce is thickened. In a bowl, beat egg yolks lightly. Pour about half of the hot sauce mixture into the beaten yolks, stirring briskly. Return egg yolk mixture to saucepan and blend well; stir in lemon juice, nutmeg, and cooked drained broccoli. In another mixing bowl, beat egg whites with cream of tartar until soft. Stir egg whites into sauce mixture. Turn all of it into an ungreased 1-quart baking dish. Bake at 350° until soufflé is puffed and golden brown, about 35 to 40 minutes, Serve immediately.
