Hi, I'm Stephanie Gallagher for About.com, and today, we're making a basic bread stuffing from our Southern Food site.
Basic Bread Stuffing Ingredients:
- 1/3 cup butter
- 1/2 cup chopped celery
- 1/4 cup diced onions
- 4 cups 1-inch bread cubes - and it's really best to use day-old, stale bread cubes for stuffing, but if you only have fresh bread, just toast it lightly before adding it to the stuffing mixture
- 2 large eggs, beaten
- 1/2 tsp. ground sage
- 1/2 tsp. poultry seasoning
- 1/2 tsp. salt
- 1/8 tsp. freshly-ground black pepper
- 1/2 to 3/4 cup chicken or turkey stock or broth - stock has a richer flavor, but broth works fine, too
Mix Dry Bread Stuffing Ingredients
Preheat the oven to 325 degrees.Melt the butter in a 12-inch skillet over medium heat. Add the celery and onions, and let the vegetables sweat until softened, about 5 minutes. Place the bread cubes in a large mixing bowl. Scrape the celery and onion mixture into the bowl, then add the eggs, sage, poultry seasoning, salt and pepper. Mix it all together.
Moisten the Stuffing with Chicken Broth or Stock
Now add the turkey or chicken stock or broth, starting with 1/2 cup at first, and stir. You want the stuffing to be moist, but not overly wet, like this. If you need more broth, add it.
Bake Bread Stuffing
Transfer the mixture to a 9-inch square baking dish that's been sprayed with cooking spray, and cover with foil. Bake for 30 minutes. Remove the foil, and bake another 5 to 10 minutes until browned.Serve this stuffing with turkey, chicken or pork. Thanks for watching.
