No get-together is complete without a tray of mouthwatering hot wings. In this recipe, chicken wings are coated in a blend of hot sauce, spices, and sour cream.

Hi, I'm Chris Chmura for About.com Food. We're turning up the heat in our kitchen and to make hot wings.

Hot Wings Ingredients

Here's what you'll need from the fridge and the pantry:
  • chicken wings
  • 1 cup flour
  • vegetable oil
  • hot sauce
  • sour cream

Prepare the Chicken

Begin by cutting each wing at the joint to separate it into two pieces. Also, remove the tips.

Now, wash the wings under cold water, and pat them with a paper towel until they're damp.

Coat the Chicken Wings in Flour and Spices

Place the flour in a bowl to dredge the wing pieces. Feel free to add spices for flavor. I think paprika is an excellent choice.

Now generously coat the wing pieces with the flour.

Fry the Chicken Wings

Once that's done, heat about 1 1/2 inches of vegetable oil to 350 degrees. When a pinch of the oil sizzles on the stove, you're ready to move on.

Now, gently place the pieces into the hot oil and fry for a few minutes on each side. Pluck the wings from the oil and rest them on a paper-towel lined plate to absorb the excess oil.

Make the Hot Wing Sauce

Next, we'll make the sauce. In a small bowl, I'm blending about 1/2 cup of sour cream with a few tablespoons of hot sauce. The precise amount of each is up to your taste buds.

If you really want hot wings, you can forget the sour cream altogether. But, I think it makes for a smooth texture against the crispy breading.

Serve the Hot Wings

Now, transfer the wings to a large bowl, add the sauce, and toss gently until the wings are covered evenly. Serve either hot or cold with some ranch or bleu cheese dressing and celery sticks to cool the heat.

That's it--the full flavor of a restaurant, with a drastically reduced, smaller price tag. Enjoy!
