Ingredients for Making White Chicken Crockpot Chili
To make this chili, you will need- 1-1/2 lbs chicken breast, cubed
- 1 cup chopped onion
- 1 15-oz can chicken broth
- 1 cup salsa verde
- 2 cloves finely chopped garlic
- 2 tsp cumin seeds
- 1 tsp dried oregano
- 3 15-oz cans white beans, drained and rinsed
- 2 chopped bell peppers
- 1 chopped jalapeno, to taste Salt/pepper to taste And a large slow cooker
Instructions for Making White Chicken Crockpot Chili
In the bowl of the slow cooker, combine the chopped chicken, the onions, the garlic, the cumin, the oregano, the chicken broth, and finally the salsa verde. Stir everything together and cover it with a lid. Turn the cooker to low and cook for three hours. After three hours, add the beans and cook for another 30 minutes. The beans will thicken the chili and absorb some of the excess moisture. After 30 minutes, add the chopped bell peppers and jalapeno, and stir them together. You don't want to add these too early, or they will get overly soft and mushy. Cover the chili once more and cook for an additional 30 minutes. After the final 30 minutes, taste your chili, and add salt, pepper, and any additional seasonings to taste.How to Serve White Chicken Crockpot Chili
You can serve it as it is, or you can move some of it to a blender or use an immersion blender to puree a little of the chili to make it thicker and heartier. This chili is a great change from traditional beef and bean chilis. It has a lighter flavor but is just as hearty, satisfying, and filling.
