Transcript:Favorite Beef Crockpot Chili Recipe

Hi, I'm Gary Chisholm with About.com, and today we're making crockpot chili, using a recipe from About.com's Southern Food site.

Ingredients for the Favorite Beef Crockpot Chili

For this recipe you'll need:
  • 2 pounds of ground beef
  • 1 cup of chopped onions
  • 2 fifteen-ounce cans of red kidney beans, drained
  • 2 14-1/2 ounce cans of tomatoes, drained
  • 1 yellow pepper, seeded and coarsely chopped
  • 2 cloves of garlic, peeled and crushed
  • 2-3 tablespoons of chili powder
  • Salt and black pepper
  • 1 teaspoon ground cumin

Prep the Favorite Beef Crockpot Chili

In a large skillet, brown the ground beef with the chopped onion. Put the ground beef, onions and remaining ingredients in a crockpot and stir well. You might be tempted to add water or broth at this point but wait a few hours and check it. Chances are you won't have to add a drop.

You can also add a teaspoon of chipotle powder for spice. A can of black beans will help stretch out the chili. Some things you can add to mix it up are an extra can of diced tomatoes, an extra can of kidney beans or a pack of chili seasoning.

Cook the Favorite Beef Crockpot Chili

Cover and cook on low for nine to eleven hours. You can set your crockpot for all-day cooking. If you're short on time, set it to high for 5-7 hours. Check the chili periodically to make sure that it is not drying out. Add a touch of beef stock to keep it moist.

This chili comes out great. I like to add cheese, sour cream and raw onions. You can put some hot sauce in the bowl for an extra kick.
