Ingredients for Crock Pot Beef Stew

Here are our ingredients:
  • 2 pounds beef stew meat (cut into bite size pieces)
  • 1 tablespoon chopped parsley
  • 1 tablespoon thyme leaves
  • 2 teaspoons chopped rosemary
  • 1 tablespoon chopped garlic
  • 1 tablespoon paprika
  • 4 teaspoons kosher salt
  • 2 teaspoons Worcestershire sauce
  • 1/4 cup all-purpose flour
  • 1/4 cup red wine vinegar
  • 1/4 cup tomato paste
  • 1 pound Idaho potatoes ( peeled and diced) (store in water)
  • 2 cups carrot nibs (Cut into small pieces)
  • 1 large yellow onion (diced)
  • 2 cups beef stock
  • black pepper
  • blended olive oil

Instructions for Preparing the Meat for Beef Stew

Here we have our meat. You want to drizzle in about 2 tablespoons of olive oil. Go ahead and add in half of your salt and plenty of black pepper. I'm going to come in here with my hand and mix everything together with my hands making sure everything is fully incorporated. You want to let it sit for about five minutes before you start to cook it.

So, here I had a screaming hot sauté pan over high heat. I'm going to add in a little bit of this oil. You see that it immediately starts to smoke. Now we are going to begin to see her hour of need. You want to brown it all around. Take your time. Make sure you get a nice brown sear.

Instructions for Crock Pot Beef Stew

After each batch is nicely seared, go ahead and drop it right into your slow cooker. So, right into the same sauté pan that we cooked the meat in I am going to add in a little bit of oil. No, that is not dirt. That is yummy on the bottom of that pan. We are going to add in our garlic. Just let it brown as you are stirring it around.

Once the garlic browns add in the onions. Stir that around with a spatula. The onions will pick up all those goodies off of the bottom of the pan. That is loads and loads of flavor. We are going to sauté the onions for about two minutes. Go ahead and sprinkle on the rest of the salt. Just tossed that around a little bit and then season with black pepper. Add in the paprika. Toss that around and let it cook for two more minutes and then we are all done with the onions. the onions are all done. Look at those things. They are gorgeous.

Add them right into the pot. go ahead and add in your beef stock, red wine, rosemary, Worcestershire sauce, red wine vinegar tomato paste and sprinkle the flour all over the top. Go in with a rubber spatula and mix everything together. So set your slow cooker to the simmer setting. Cover it and let it cook for 3 1/2 hours. 3 1/2 hours later at in your carrots and potatoes. Make sure to discard the water from your potatoes before adding them into the stew. Give it a nice start and let it cook for 30 more minutes Or until the potatoes and carrots are tender. so, for the final step I'm going to add in the parsley and the time. Go ahead and mix that together and you are ready to eat.

So, hot out of the slow cooker, here is your stew. I paired it with mashed potatoes and also goes very well with white rice.
