Transcript:Corn ChowderHi, I’m Roblé for About.com. Today I’m going to show you how to make Corn Chowder. Here we go.
Ingredients for Corn ChowderHere are our ingredients.
- 1 cup heavy cream
- 1 white onion (small dice)
- 1 large Idaho potato (medium dice)
- 3 cups vegetable stock
- 2 cloves chopped garlic
- 2 tablespoons parsley (chopped)
- 2 tablespoons butter
- 2 teaspoons thyme (leaves)
- 1/4 cup all-purpose flour
- kosher salt
- black pepper
- 6 ears of fresh corn
How to Prepare the CornThe final ingredient is six years of fresh corn which you can see I have taken all off the cob. I’m going to show you how I did that right now. You will notice that I have towels all around the cutting board. That is to keep the corn from spilling out all over the place. You will see why right now. You want to take the corn, holding on to it by its little handle up top. Next take your knife and just ride down the side of the cob. You see that the corn is shooting everywhere. That is why you want the towels, to avoid a big corn explosion. You see I am spinning the corn around as I cut, removing all of the corn from the cob. There’s your car. And there is your corn.
Combine Butter, Garlic and OnionsHere we had a pot over medium heat. I’m going to go ahead and add in the butter. It might brown a little bit and that’s just fine. Brown butter is very tasty. Let that butter melt. As it is nothing we will go ahead and add in the garlic. Stir that around. Let the garlic sauté and brown. Once the garlic has browned we will go ahead and add in the onions. You see that the garlic is nice and brown. That is flavor. We are going to sauté the onions for about 2 1/2 to 3 minutes. S
Add Thyme and Flour to Corn Chowdero now we are going to add in our thyme. Keep stirring these onions around. What we want to do is to caramelize the onions. This will bring out a lot of sweetness and flavor, flavor, flavor. So, our onions are starting to caramelize. You can see that they are getting brown around the edges. You don’t want to overdo it. Go ahead and stir in the flour. Stir in the flour until it’s fully incorporated.
Boil the Other IngredientsNext, take your vegetable stock and stir it into the pot. Next, take your cream and mix that right in. Take your potatoes, remove the water from them and add them into the pot. Let the mixture comes to a boil. Let it boil for seven minutes or until the potatoes are cooked through. As this is coming up to a boil I’m going to go ahead and season with salt and fresh cracked black pepper. I like a lot of pepper. Now we have a nice rolling boil.
Add the Corn to Finish Corn ChowderSeven minutes later let’s add in our corn. Let it come back up to a simmer. Let it simmer for about three minutes and we are almost there. We are done simmering the corn. I’m going to turn the heat off. For our final step I’m going to add in the parsley. Mix that right in and you are ready to eat.
