This delicious rich, moist carrot cake is terrific for many occasions, especially for holiday parties, birthday parties and dessert. Here's a video recipe for a great non-dairy carrot cake.

Hi, I'm Daniel Kazel for About.com. Today we are going to make carrot cake. It's great for birthday parties holidays and dessert. This recipe comes from Ashley Skabar. So, let's get started. Prep time is thirty minutes. Cook time is forty minutes. Total time is one hour and ten minutes.

Non-Dairy Carrot Cake Ingredients

Ingredients include:

  • 2 cups white flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 1/2 cups sugar
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. ground ginger
  • 2 cups grated carrots
  • 1 cup chopped fresh pineapple, or 1 cup chopped frozen pineapple, thawed
  • 1/2 cup canola oil
  • 1/4 cup applesauce
  • 3 large egg whites
  • 1 cup ground walnuts
  • 1/4 cup plain rice milk, such as Rice Dream
  • 1 tbsp. apple cider vinegar
  • 1 tsp. vanilla

Mix Ingredients for Non-Dairy Carrot Cake

In preparation, preheat your oven to 350 F. Lightly oil and flour a spring form pan, tapping out the excess flour. In a large mixing bowl, combine the flour, baking powder, baking soda, sugar, cinnamon, ground ginger and salt. In a food processor or blender, combine the pineapple, canola oil, applesauce, egg whites, rice milk, vinegar and vanilla until well combined. Take your time and add your dry ingredients to the pineapple mixture, and stir in the carrots and walnuts until evenly incorporated.

Bake Non-Dairy Carrot Cake

Pour batter into the prepared pan and bake, until a tooth inserted into the center of the cake comes out clean, about 40 minutes. Cool completely, slice into layers and frost with dairy-free cream cheese frosting this recipe makes one, three layer cake, and has healthy carrots inside!
