Hi, I'm Gretchen Siegchrist for About.com Food, and I am going to share with you a recipe for delicious butterscotch pudding.

Butterscotch Pudding Ingredients

For this recipe, you will need:
  • 1 cup brown sugar
  • 1/4 cup corn starch
  • 1/2 teaspoon salt
  • 2 eggs
  • 2 cups milk
  • 1 teaspoon vanilla extract
  • 1/4 cup butter

Mix and Heat the Pudding Ingredients

Begin by cracking the eggs into a small bowl and beating them. In a large saucepan, stir together the sugar, cornstarch and salt. Place this over medium heat and stir in the eggs and the milk. Using a whisk, stir the pudding constantly until it thickens. Now add the butter and vanilla and stir them in.

Serve the Butterscotch Pudding

Transfer the pudding to a large bowl. You can serve it right now if you like it hot, or cover it with plastic wrap and place it in the refrigerator until it cools.
