Dress up your salad with tasty chicken and sauteed black beans. This quick and easy lunch is packed with protein.

Hi I m Kristina Keller for About.com Food. Today I'm going to show you how to make a black bean and chicken salad. It's really quite simple.

Black Bean and Chicken Salad Ingredients

The ingredients you need are:
  • baby spring mix
  • 1 cup chopped up baby carrots
  • 1 cup chopped red onion
  • roasted red pepper
  • 1/2 can green chilies
  • chicken strips
  • 1 can of sauteed black beans
  • 1/2 jar of salsa
  • 1 cup of cheese
  • crushed corn chips

Are your appetites ready? Let's get started. This recipe serves two.

Assemble Salad Ingredients

I start with my baby spring mix in a bowl and to the spring mix I add my chopped up baby carrots. After the carrots, I add the red onion. I then add the roasted red pepper (it's easier to use a spoon), and the green chilies. After that you start with the chicken. If you don't like chicken you can also use strips of steaks, ground beef or make this salad vegetarian. Followed by the sauteed black beans.

Sauteing Black Beans

Now you can use the black beans right out of the can but I like to saute them over a medium heat, with olive oil, red onion, a little bit of salt, pepper and taco seasoning for just about 5 minutes.

Add Final Ingredients

After the black beans you are going to add salsa, sprinkle cheese and sprinkle on some crushed corn chips.
