Hi. I'm Krystyna Rittichier with About.com, and today I'll show you 5 quick recipes for leftover turkey. I'll show you how to make turkey salad with red grapes, turkey, cheese and pasta wheels, turkey stuffing bake, turkey Caesar salad, and turkey sandwich melts.

Make Turkey Salad With Red Grapes Using Leftover Turkey

For turkey salad with red grapes, you will need:

  • 1 Cup Red Seedless Grapes, Halved
  • 1 Cup Diced Celery
  • 1/2 Cup Chopped Green Onion
  • 3-4 Cups Cooked Turkey, Diced into Bite-Sized Pieces
  • 1 Tsp Lemon Juice
  • 1 Cup Mayonnaise
  • 1/8 Tsp Black Pepper
  • Salt to Taste

Combine all the ingredients thoroughly, and serve on bread as a sandwich or on top of fresh greens as a salad.

Use Leftover Turkey for Turkey, Cheese and Pasta Wheels

For turkey, cheese and pasta wheels, you will need:

  • 8 Ounces Pasta Wheels, Cooked
  • 4 Tbsp Butter
  • 1/2 Cup Green Onions, Sliced
  • 1/4 Cup Flour
  • 2-1/4 Cups Milk
  • 1-1/2 Cups (6 Ounces) Shredded Sharp Cheddar Cheese, Divided
  • 1 Cup (4 Ounces) Shredded Parmasan Cheese, Divided
  • 1/2 Tsp Salt
  • Dash Nutmeg
  • Dash Pepper
  • 3 Cups Cooked Turkey, Cut into Bite-Sized Pieces
  • 1 Cup Seasoned Bread Crumbs

Preheat your oven to 350 degrees. Grease a 3-quart baking dish. In a large saucepan melt 4 tablespoons of butter over medium heat. Add the green onions and flour, and stir until you achieve a medium paste. Stir constantly as you slowly add the milk. Continue stirring as the sauce thickens. Add 1 ¼ cups of the chedder cheese, ¾ cups of the parmesan, the salt, nutmeg, pepper, and turkey. Place the cooked pasta in the bottom of the dish, and pour the sauce mixture over the pasta. Sprinkle the casserole with the remaining cheeses and the bread crumbs. Bake in the oven for 30 minutes.

Make Turkey Stuffing Bake With Leftover Turkey

For turkey stuffing bake, you will need:

  • 6-8 Ounces Herb Seasoned Stuffing Mix
  • 10 Ounces Frozen Broccoli, Thawed and Drained
  • 1 Cup Diced Cooked Turkey
  • 1/2 Cup Shredded Sharp Cheddar Cheese
  • 1/4 Cup Green Onion, Thinly Sliced
  • 6 Eggs
  • 1-1/2 Cups Milk
  • 2 Tbsp Sliced Almonds

Place half of the stuffing mix in a greased 8-ounce baking dish. Top with broccoli, turkey, cheese, and onions. Top this with the remaining stuffing mix. Mix the milk and eggs together, and pour this over the stuffing mixture. Sprinkle the casserole with the almonds. Cover and refrigerate overnight. Bake the casserole in the oven preheated to 350 degrees for 1 hour.

Use Leftover Turkey for a Turkey Caesar Salad

For a turkey Caesar salad with Feta, you will need:

  • Torn Hearts of Romaine Lettuce
  • Red Grapes, Halved
  • Cooked Turkey, Cut into Bite-Sized Pieces
  • Feta Cheese
  • Caesar Salad Dressing

Add all the ingredients into a large salad bowl, including the dressing, and toss to coat.

Make Turkey Sandwich Melts With Leftover Turkey

For turkey sandwich melts, you will need:

  • 4 Slices Toasted Bread
  • Sliced Cooked Turkey
  • 1 Can Cream of Mushroom Soup
  • 1/4 Cup Water
  • 1/4 Cup Shredded Sharp Cheddar Cheese

Preheat your oven to broil. In a medium microwave safe bowl, mix the soup with the water and heat this in the microwave for 3 minutes. Place the toast on a baking sheet and cover each piece with a thin slice of turkey, a heaping spoonful of mushroom soup, and cheddar cheese. Put the sandwiches under the broiler and cook until the cheese is melted.
