Transcript:5 Quick Recipes for Leftover Ham

Hi, I'm Gina Miller with About.com Food, and today, I am making five recipes with leftover ham. A fresh baked ham for Sunday dinner is so delicious but you don't want to eat simple ham leftovers every night, so here are five variations.

Use Leftover Ham for Salad Recipe

First, a tip: Don't worry about exact measurements in these recipes. These are leftover dishes, so simply use what you have leftover in quantities that you like. Okay, here's the first idea – Ham salad. You'll need ham, low fat mayonnaise, some chopped celery, a chopped hardboiled egg and some chopped pickles to taste. Mix ground ham with a low fat mayonnaise, chopped celery, a chopped hardboiled egg and chopped pickles, mix together and refrigerate for a few hours before serving on bread or a lettuce leaf. Okay, here's the second idea: Ham and melon skewers. You'll need a cantaloupe, some ham, and cayenne pepper to taste. Sprinkle cubed cantaloupe lightly with cayenne pepper and let set for 5 minutes. Slice the ham paper thin in 2 x 4 inch strips. Roll the ham around the cantaloupe cubes and pierce with a skewer. These are great for a snack, or as an appetizer with cocktails.

Make a Quiche With Leftover Ham

The third idea: Ham and navy bean soup. You'll need ham, 2 cans of cannellini white beans, water, Italian seasonings, some chopped onions, and some celery. Add the beans to a pot filled with chopped ham. Then add a small amount of water, Italian seasonings, chopped onions and celery. Bring to a boil, then let simmer on low heat for 1 hour. That's it; you've got a delicious and hearty soup to eat on a cold night. My fourth idea: Ham & cheese quiche. Yes, real men still eat quiche, so don't be afraid to fix this for everyone. You'll need ham, eggs, cheese, half and half, spices and a pie crust. Whisk the eggs in a bowl with the half and half. Add the spices and whisk. Now, add the ham and whisk again. Layer the pie crust with cheese. Pour the egg mixture over the cheese. Bake at 425º for 15 minutes. Then, reduce the heat to 350º and continue baking for 25 minutes. Serve warm with some sourdough bread.

Final Leftover Ham Recipe

And, finally, my fifth idea: Croque-monsieur, also known as a grilled ham and cheese sandwich. You'll need ham, butter, sourdough bread, and some cheese. Butter the outside of two pieces of sourdough bread and place the ham and some cheese on the unbuttered side of one piece. Then, make a sandwich. Then, grill in a frying pan. Here's a tip: Use a heat-proof plate to press the sandwich into the frying pan. This will help the cheese melt evenly. Once grilled, add more cheese to the top of the sandwich and broil in a toaster oven until the cheese melts. Serve bubbling hot with fruit. There you have it. Five scrumptious ways to use your left over ham.
