Transcript:3 Quick Pies with a Graham Cracker Crust

Hi, my name is Molly Wheeler and I’m here for About.com. Today I’ll be showing you how to make 3 easy pie fillings for a graham-cracker crust. The first is a frozen lemon pie, the second is an easy chocolate pudding pie, and the third is a key lime pie.

For the Frozen Lemon Pie, You'll Need:

  • 1 can (6 ounces) frozen lemonade concentrate (as the typical  can of frozen lemonade is 12 oz I just used half),
  • 1 tub (8 ounces) whipped topping, thawed,
  • 1 can sweetened condensed milk.
Mix the lemonade, whipped topping, and the condensed milk with a mixer. Pour the mixture into pie crust and put it into the freezer. That’s all there is too it! Set the pie out for about 15 minutes before you serve it.

For the Chocolate Icebox Pie, You'll Need:

  • 2 packages chocolate instant pudding and pie filling (4-serving size)
  • Milk
  • Whipped topping or sweetened whipped cream.
Prepare the pudding according to the package directions for a pie, with milk and both packages of pudding mix. For these we brought 4 cups of milk and the pudding mixes to a simmer while stirring. After it has cooled for 5 minutes pour the pudding into a cooled graham cracker crust. Chill the pie for at least 30 minutes before serving. Top each slice with a dollop of whipped topping or prepared whipped cream. For variations you can use any type of pudding you like- vanilla, banana, etc.

For the Key Lime Pie, You'll Need:

  • 2 eggs
  • 1/2 cup key lime juice, fresh if possible
  • 1/2 cup heavy whipping cream
  • 1 can (14 ounces) sweetened condensed milk
  • 1 to 2 teaspoons finely grated lime or key lime zest, divided
  • 5 egg yolks
  • Whipped cream or whipped topping, optional
  • 1 graham cracker pie shell
Whisk the sweetened condensed milk with the egg yolks. Stir in the whipping cream and the lime juice. Stir in 1 to 1 1/2 teaspoons lime zest. Pour the mixture into a prepared graham cracker crust and bake at 325° for 15 to 20 minutes. Remove from pie from the oven and let it cool. Top the pie with whipped cream and a little lime zest just before serving. This is a great pie to add a meringue to instead of the whipped topping.
