Transcript:How to Make Ras El Hanout

Hi, I'm Hamid Idrissi chef/owner of the Tagine Dining Gallery in New York for About.com. Today, we're going to make ras el hanout.

Ras El Hanout Ingredients

To make ras el hanout, you'll need:

  • 1 tsp saffron
  • 1 tsp paprika
  • 2 tsp turmeric
  • 1 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1 tsp coriander seeds
  • 1/2 tsp cayenne pepper
  • 1/2 tsp dried preserved lemon
  • 1/4 tsp allspice
  • 1/2 tsp harissa
  • 1/2 tsp caraway seeds
  • 1 tsp cumin
  • 1 tsp nutmeg
  • 1/2 tsp mace
  • 1/4 tsp cloves
  • 1 tsp nutmeg
  • 1 tsp salt

Grind Dry Ingredients for Ras El Hanout

Now we're ready to make ras el hanout. Ras el hanout has some dried ingredients which I'm going to grind fresh, as it tastes better that way. Here we have cumin, saffron, cloves, nutmeg, cinnamon, allspice, dried harissa, coriander seeds, caraway seeds, and dried preserved lemon skin. Put these ingredients in a grinder and grind.

Mix All Ras El Hanout Ingredients

Now we're done grinding all of the course spices. Make sure everything is ground fine. Then add these ingredients to the other spices in a bowl. We're going to make a premium blend of Moroccan spices. Add turmeric, mace, ginger, cayenne pepper, paprika, and salt to the fresh ground mixture. It starts smelling good. Use your hands to mix if you must. Make sure the spices are all blended smoothly. Now it's smelling very good!

Prepared Ras El Hanout

This is ras el hanout. It's a very important ingredient in Moroccan cooking. It's a key, premium blend of spices. Every home in Morocco uses this blend to make a lot of different dishes.
