Transcript:How to Make Roasted Red Pepper Hummus
Hi, I'm Stephanie Gallagher for About.com, and today, we're making roasted red pepper hummus. Let's get started.
Ingredients for Roasted Red Pepper Hummus
For this recipe, you'll need:
- 2 cloves of garlic
- 1 15 oz. can of chickpeas (aka, garbanzo beans)
- 1/3 cup tahini
- 1/4 cup lemon juice
- 2 Tbsp. extra virgin olive oil
- and 1/3 to 3/4 cup of roasted red peppers
Instructions for Making Roasted Red Pepper Hummus
Start by draining the chickpeas and rinsing them to get all that salty liquid off.
Now place the garlic cloves in a food processor and pulse a few times. This way, you don't have to chop the garlic by hand.
Next add the chickpeas to the food processor, then the tahini - it's kind of sticky, like peanut butter. Then add the lemon juice and the olive oil.
Process the mixture until it's sort of thick and chunky, like this. Now add the roasted red peppers, and process again until the hummus becomes smooth and creamy.
How to Serve Roasted Red Pepper Hummus
Serve the roasted red pepper hummus with pita chips for a party dip, healthy snack or appetizer anytime.
