Transcript:How to Make Couscous With Peas

Hi, I'm Charlyn Keating with About.com, and today I'm going to show you a savory couscous recipe with onions, garlic and green peas.

Ingredients for Couscous With Peas

For this recipe you'll need:
  • 2 cups of instant couscous
  • 1 tablespoon of extra virgin olive oil
  • 32 ounces of low sodium chicken broth
  • 1-1/2 cups of frozen peas
  • 2 cloves of garlic
  • A small onion

Make the Couscous With Peas

First, slice the garlic cloves and crush them with the side of a large kitchen knife, then chop the onion into small pieces.

Heat a saucepan on medium to medium-high heat and add about a tablespoon of olive oil. Once the oil is heated, add the crushed garlic and the diced onions.

Saute the onions and the garlic in the olive oil for about three to five minutes, until the onions are translucent. Be sure not to let the temperature get to high, because you don't want the onions to brown.

Next, add the frozen peas and add in the chicken broth.Bring it to a boil, then stir in the couscous. Add salt and pepper.

Put a tightly-fitting cover over the saucepan and remove it from the heat. Let the couscous set for about five to ten minutes. When it's ready, all the chicken broth will be absorbed into the couscous. Fluff it up and it's ready to serve.

This dish can be served in a bowl as an easy weeknight side dish, or fancied up with a sprig or two of parsley and served to guests. Either way, it smells delicious.
