Transcript:How to Make Chicken Shawarma

Hi, I'm Stephanie Gallagher for About.com. And today, we're making Middle Eastern street food -- chicken shawarma.

Ingredients for Chicken Shawarma

For this recipe, you'll need:
  • 2 cloves garlic, chopped
  • 1 cup plain yogurt
  • 1 tsp. allspice
  • 1/2 tsp. ground cardamom
  • 1 tsp. pepper and 1/2 tsp. salt
  • 1/2 cup vinegar
  • the juice of 1 lemon
  • 1-1/2 lbs. boneless skinless chicken thighs

Mix Ingredients with Lemon Juice

Place the garlic in a large mixing bowl. Add the yogurt, allspice, cardamom, pepper and salt. Pour in the vinegar and squeeze in the lemon juice.

Mix it all together. Now cut the chicken thighs into thin strips. Add to the yogurt marinade, stir and refrigerate for 8 hours or overnight.

Cook the Chicken

Place the chicken with the marinade in a dutch oven or large frying pan. Cook the chicken over medium heat for about 30 minutes until tender.

Make the Sauce

Meanwhile, make the sauce. You'll need 1 cup of tahini, 2 cloves of garlic, chopped, 1/4 cup of lemon juice and 2 Tbsp. plain yogurt.

Add all the ingredients to a bowl, and mix them together. Now add up to 1 cup of water to thin the sauce and make it the consistency of a dressing.

Prepare Vegetables

Now the chicken should be ready, and we can make the vegetables to go on in the pita. I'm using cucumbers, tomatoes, fresh parsley, lemon juice and 1/2 tsp. of sumac. Chop the parsley and add it to a small bowl. Add the remaining vegetables. Squirt the juice of the lemon over the bowl, and sprinkle on the sumac. Mix it together.

Assemble the Chicken Shawarma

Now you're ready to assemble your shawarma. Spread some of the tahini sauce on a warmed pita. Top with the chicken and finally the vegetables. And there you have it - chicken shawarma.
