Transcript:How to Make Beef ShawarmaHi, I'm Stephanie Gallagher for About.com, and today, we're making beef shawarma. Let's get started.
Ingredients for Beef ShawarmaFor this recipe, you will need:
- 1/2 cup of plain yogurt
- 1 clove of garlic, minced
- 2 Tbsp. vinegar
- 1/2 tsp. pepper and 1/4 tsp. salt
- 1/2 tsp. allspice
- 1/4 tsp. ground cardamom
- the juice of 1 lemon
- 1/2 to 1 lb. of boneless beef
Make the Beef for the Beef ShawarmaLet's start by making the marinade for the beef. Add the yogurt to a small mixing bowl. Add the garlic, the spices, vinegar and lemon juice. Whisk it all together until it's smooth.
Now slice the beef into thin strips - remember to slice against the grain so the beef is tender. Add the beef to the yogurt mixture and stir to coat it well . Refrigerate 8 hours or overnight.
When you're ready to make the sandwiches, place the beef and the marinade in a large skillet over medium heat. Cook 10-15 minutes until the beef is cooked through. Ok, set that aside.
Of course, you'll need pita bread for your shawarma. You can toast it in a grill pan or warm it in the microwave.
Make the Sauce for the Beef ShawarmaTo make the sauce, you'll need 1/2 cup of tahini, 1 minced garlic clove, 1/4 cup of lemon juice and 2 Tbsp. of plain yogurt. Add all of those ingredients to a mixing bowl, and stir well. You may need to add a little water to thin it out.
For the filling, you'll need some chopped cucumber, diced tomatoes, diced red onions, finely-chopped fresh parsley, sumac and olive oil.
Add the vegetables to a bowl, sprinkle on the sumac and some salt and drizzle in some olive oil, Then mix it all together.
Now spread some of the shawarma sauce on your pita bread. Top with the beef strips and the vegetables. And here's your beef shawarma.
