Covered in sweet powdered sugar, Mexican wedding cookies, also known as wedding cakes, are a delightful and light snack made with only six ingredients.

Hi, I'm Rachel Edelman for About.com Food. Today I'm going to show you how to make a traditional favorite, Mexican wedding cookies.Mexican Wedding Cookie Ingredients
For this recipe you will need:- 2 c. flour
- 2 sticks diced cold butter
- 1 3/4 c. powdered sugar
- 1 tbsp. vanilla extract
- 1/2 c. almonds
- 1/2 c. pecans
Grind the Pecans and Almonds
Pour the almonds and then pour the pecans into a food processor. Grind the nuts until they are almost like a powder.Combine the Wedding Cookie Ingredients
Next, add in the butter. process the nuts and the butter together until it becomes smooth. Now add a 1/4 c of the powdered sugar and the tbsp. of vanilla into the bowl. Use the processor to mix again. Then add in the flour in two parts, and mix so you have the cookie dough.Scoop the Dough Onto a Cookie Sheet
To create even sized cookies, I like to use a small ice cream scoop to make the cookies. Scoop up the dough, and release onto a cookie sheet lined with parchment paper. You can also just use your hands to roll small one inch balls of dough. Place the cookies about one inch apart.Bake the Mexican Wedding Cookies
Bake 15-20 minutes, or until brown the bottoms of the cookies start to brown.Roll the Cookies in Sugar
