How to Mince a Jalepeno

Onscreen: Hi I am Rachel Edelman for about.com food. Jalepenos may be small, but they pack a big bite. They can be a spicy addition to a variety of meals from salsa to stir-fry. Everyone who has cut a jalepeno and then touched their eyes knows that it can burn. So here are a few tips.

To get started all you will need is a small knife and a spoon.

Don t forget to rinse your pepper before you begin.

With your knife cut the stem off of the pepper. Under the stem is the hottest part of the pepper. The oils of the pepper can get on your fingers, so make sure not to touch your face or eyes, otherwise it may burn. If you are very sensitive, just wear gloves.

Next, slice the pepper down the middle. With your spoon, scrape out the seeds and some of the white insides. The seeds are the main source of the spice. If you like your food really hot, then you can save some seeds to spice up your dish.

Now slice very thin strips, don t worry about making them perfect. Once it s all cut, rotate the strips. Take a bunch at a time and cut them again to make very small pieces, this is called mincing. If the pieces look too big, you can run through them with your knife a few times.

Minced jalepenos can be used for your cooking to season your meat or vegetables. You put it in the pot at the start with the oil and other ingredients like garlic. Raw jalepenos can be tossed into your salads or salsas.
