Transcript:How to Make Mexican White RiceHi, I am Gina Miller with About.com Food. Today I am making Mexican white rice.
This is not just your plain white rice side dish. This recipe has a lot of flavor and texture, and can be made as a main dish entree by adding in 1 to 2 cups of cooked chicken or turkey.
Ingredients for the Mexican White RiceThe ingredients you will need to make Mexican white rice are:
- 2 tablespoons of vegetable cooking oil
- 1 small onion, peeled and chopped
- 3 cloves of garlic, peeled and finely chopped
- 2 cups of cooked white rice
- 1/2 small red chile pepper, seeded and finely chopped
- 1/3 cup peas, frozen
- 1/3 cup carrots, frozen
- 1 teaspoon salt
- 1 cup chopped cooked chicken breast (optional)
Cook the Mexican White RiceIn a large saucepan heat the oil over medium-high heat, saute onion, garlic, and red chile peppers, for about 3 minutes, then add the cooked rice, salt and pepper to taste. Cook over medium heat about 10 minutes.
Add the frozen vegetables and cook uncovered for another 10 minutes, then cover and reduce heat to low and simmer for another 5 minutes. If adding cooked meat, add it during the last 10 minutes of cooking.
