Hi I am Gina Miller with About.com Food and today I am making easy Mexican rice, just like the kind you find in the Mexican restaurants.

Ingredients for the Easy Mexican Rice

For this recipe, you will need:
  • 2 tablespoons oil
  • 1/4 of a medium onion
  • 1-1/2 cups rice
  • 3 cloves finely chopped garlic
  • 2-1/2 cups chicken broth
  • 1 cup of spicy stewed tomatoes
  • 4 heaping tablespoons of finely chopped cilantro
  • 1 fresh red chile, chopped and seeded
  • 1/2 cup of corn, cooked
  • 1/2 cup of peas, cooked (optional)

Make the Easy Mexican Rice

In a medium saucepan, heat oil over medium heat. Add in the fresh onion and saute for 1-2 minutes until softened. Add dry rice and cook with the onions for about 5 minutes or until rice becomes a golden brown color. Add in the garlic to the rice and saute for one more minute.

Add in broth and tomatoes slowly into the rice, to avoid being splattered with hot liquid.Stir and bring to a boil. Once it starts boiling, turn the heat to low and cover. Let it simmer for 20 minutes and fluff with a fork, now add the cooked corn and peas and let it set with the hot rice for an additional 5 minutes. This is a very easy dish that is great with any Mexican dish like tacos and enchiladas.
