Transcript:How to Make Easy Enchiladas
Hi, I'm Stephanie Gallagher for About.com, and today, we're making easy enchiladas from our Mexican Food site.Ingredients for Easy Enchiladas
For this recipe, you will need:- 12 corn tortillas
- 2-3 Tbsp. oil
- 28 oz. jarred red enchilada sauce
- 1-1/2 cups of shredded chicken or beef
- 2 cups shredded mozzarella or queso blanco (I'm actually using a Mexican blend)
Instructions for Making Easy Enchiladas
Preheat the oven to 500 degrees. Use a brush or your hands to coat each tortilla with oil. When coated, place the tortillas on a sturdy baking sheet. I actually find it's easier to brush one side with oil, place it on the baking sheet face down, then brush the other side with oil while it's on the baking sheet. Bake the tortillas for about 3 minutes or until golden, but not crispy. Reduce the oven temperature to 400 degrees. Pour a little sauce in the bottom of a 9 x 13 baking dish, just enough to coat the bottom. And pour the remaining sauce in a bowl. Now dip each tortilla in the sauce to coat, and lay in the prepared baking dish. Top with about two tablespoons of the chicken, then a few tablespoons of the cheese. Roll the tortilla and turn over so it's seam side down in the dish. Repeat with the remaining tortillas and filling.Pour the leftover sauce over the tortillas, and sprinkle on any leftover cheese.
