Transcript:How to Make Chile Relleno
Hey guys, Greyson Ferguson here with About.com. Today we are going to make chili rellenos.Ingredients for the Chile Rellenos
To start, you'll need:- 6 Anaheim chilies
- 1/2 pound of Monterey Jack cheese
- 1/4 cup of flour
- 6 eggs with the yolks and whites separated
- 2 cups of salsa verde
- 2 cups of red salsa
- 1 cup of corn oil
Prepare the Chiles for the Chile Rellenos
Heat your oven to broil, then place the chilies onto a baking sheet. Place the sheet into the oven for 10 minutes, then flip the peppers over and slide back into the oven for another ten minutes. This blisters the skin of the peppers, making it easier to remove. Remove the Anaheim chilies from the oven and cover each with a damp paper towel, then set to the side.Beat the egg whites until it turns into a fluffy consistency, then begin to mix in a tablespoon of the flour into the egg yolks. Once the flour is mixed into the yolks, slowly pour in the whites and mix. This gives you a thick paste.
Remove the chilies from the paper towels and remove the skin. Grab one of the raised blisters and pull. Pull off the stem, then gently pull open the chilies and add in the cheese.
Fry the Chile Rellenos
Dip the pepper into the flour, then dip the floured chilies into the egg mixture. Pour in the corn oil into a pan then heat on medium-high. Set the chilies into the oil and allow the flour to fry.
