Transcript:How to Make Chicken Avocado Soup
Hello, I'm Michael Sanchez, for About.com. Today I'm going to show you how to make Chicken Avocado Soup, a light and flavorful soup perfect for any occasion.Ingredients for the Chicken Avocado Soup
You will need:- 3 skinless, deboned chicken breasts
- 3 ripe avocados
- 3 tomatoes
- 1 onion
- 1/4 cup of fresh cilantro
- 1 tablespoon of oregano
- juice from 1 lime
- 1/2 teaspoon of cumin
- 3 cloves of garlic
- 1 tablespoon of oil
- salt
- 6 cups of chicken broth
Make the Chicken Avocado Soup
First chop the onion and garlic cloves. Pour the oil into a saucepan on medium heat then place the chopped onion and garlic into the pan and saute for 1-2 minutes. Slowly add the broth, chicken and oregano to the pot and bring to a boil. Once they've reached a boil lower the heat and simmer for 1 hour.After an hour, remove the chicken and, using two forks, shred it into bite-size pieces then place them back in the pot. Next chop the cilantro, tomatoes and avocados and add them to the pot along with the lime juice, cumin and salt. Simmer the soup for another 10 minutes and then serve.
