Transcript:How to Make Fish TacosHi I'm Cliff Wildman with About.com food. Fish tacos are a great treat from the west coast, and there are a lot of ways to make them, so today I'll be showing you a fairly traditional variant that you can easily prepare in your own kitchen.
Ingredients for Fish TacosFor this recipe you'll need:
- one pound of tilapia filets cut into chunks between one inch by one inch to three inches long by one inch wide
- a few quartered limes
- one juice limed
- a quarter teaspoon of salt
- a quarter cup of flour
- two tablespoons of yellow cornmeal
- a tablespoon of chili powder
- one and half teaspoons of oregano
- one teaspoon of cumin
Additonal Ingredients for Fish Tacos
- about half a head of green cabbage, shredded
- one sliced avocado
- some corn or flour tortillas, though corn are what is traditionally used in fish tacos
- some salsa
Ingredients for the Fish Taco SauceFor the sauce, we'll need:
- a half a cup of light sour cream
- two chipotle chilis in adobo- diced
- a half a lime juiced
Instructions for Making the Fish Taco SauceIn a small bowl we'll put the sour cream, the chipotle chilis and the lime juice and mix the ingredients up. Once they're mixed well, add a pinch of salt and sugar to taste and let sit for at least 10 minutes before serving to let the chipotle work through the sauce.
Instructions for Making the Fish TacosIn a large bowl put the fish chunks and cover with the juice of one one lime. Mix this up to make the sure the fish is thoroughly covered and let marinate for at least ten minutes before you begin cooking.
In another large bowl put the flour, cornmeal chili powder oregano cumin and salt and mix well this will be the batter for the fish.
In a large skillet we're going to heat some canola oil until flour sizzles in it then we'll coat the fish in the batter and fry for 7-10 minutes until golden brown. Drain on paper towels and keep warm until you're ready to serve.
To plate this, put two corn tortillas on the plate, place some fish down the middle, add some chipotle sauce on top of the fish, add some avocado slices, top with some cabbage and then add as much salsa as you like.
