Transcript:How to Make Low-Fat Pumpkin Oatmeal Cookies

Hi, Cliff Wildman with foods. Today I'm going to show you how to make low fat pumpkin oatmeal cookies. It's a really easy quick and fun recipe that you can make with your kids and not feel bad about having a few afterward.

Ingredients for Low Fat Pumpkin Oatmeal Cookies

For ingredients you're going to need:

  • a cup of pumpkin
  • three cups of oats
  • one and a half cups of flour
  • and a cup of raisins
  • one cup of brown sugar packed
  • a teaspoon of cinnamon
  • a teaspoon of baking soda
  • half a teaspoon of nutmeg
  • and a half a teaspoon of ground cloves
  • you'll also need two egg whites lightly beaten

Instructions for Making Low Fat Pumpkin Oatmeal Cookies

First we're going to take the pumpkin and the egg whites, combine them in a bowl and set aside. In a large bowel we're going to take the brown sugar, flour, cinnamon, baking soda, nutmeg and cloves and mix it all up. now we'll add the pumpkin and egg mixture as well as the raisins and of course the oats. We're just going to mix this all up really well. Tt will take about a minute to a minute and a half, this is what it will look like when it is ready.

Next, preheat the oven to 350 degrees. We'll spray a cookie sheet with some non-stick cooking spray. Get a teaspoon and dollop the cookies onto the sheet. You should be able to fit about a dozen on the sheet and the recipe will make two dozen. Once the oven is preheated put the cookies in the oven and we'll bake them for 15 minutes. You might leave them in a little longer if you prefer them crispier, but here they're done you just one them to cool a little while, and that's the recipe. Really easy, fun and nutritious.
