Transcript:Low Fat Poached Chicken BreastHi, I 'm Chef Michelle Karam with Dishes By Michelle, in Los Angeles, California, for About.com. Today I 'm going to be showing you my recipe for Low Fat Poached Chicken Breast.
Ingredients for Low Fat Poached Chicken Breast
The ingredients for this recipe are:
- 4 cups of cold water
- 14 ounces of chicken broth, which is fat free, low sodium
- 2 bay leaves
- 2 lemons, juiced
- 2 garlic cloves
- a pinch of salt
- and 2 chicken breasts
About This Low Fat Poached Chicken Breast RecipeSo what makes this recipe so different is that we 're really going to be infusing some flavor into our poached chicken so that it 's not just your normal, rubbery, hum-drum chicken breast. This is chicken breast that has some great flavor to it, that can be used on top of salads, on top of rice, on top of just about anything that you want to use it for but it 's got a bunch of flavor that 's packed in there.
Instructions for Making Low Fat Poached Chicken BreastThe first thing were going to do is add our 4 cups of cold water to our poaching pan. We 're then going to add our 14 ounces of chicken broth or chicken stock. We 're going to add 2 cloves of garlic, 2 bay leaves, our chicken breasts, which are boneless, skinless, a pinch of salt for flavor, and then we 're going to squeeze our lemons and extract their juice. I 'm putting the entire lemon half inside of there, just so that it just extracts that much more lemon juice flavor. And then we 're going to put this on medium-low heat, covering it, allowing it to poach for 15-20 minutes. And so here you have it: your perfectly poached, low fat chicken breast.
