This low fat mini chicken meatloaf recipe is all about portion control. It's a great alternative to the usual ground beef recipe and, best of all, it cooks in about half the time of regular meatloaf.Low-Fat Mini Chicken Meatloaf Ingredients
The Ingredients you will need are:- 1 pound extra-lean ground chicken
- 1/2 cup finely chopped onion
- 1/2 cup chopped red peppers
- 1/2 cup finely chopped mushrooms
- 1/4 cup finely chopped fresh parsley
- 1/2 cup dried breadcrumbs
- 1 tbsp low sodium soy sauce
- 1/4 cup tomato ketchup
- 1 egg, lightly beaten
- Ground black pepper to taste
Cooking the Low-Fat Chicken Meatloaf
Preparation: Preheat oven to 400 degrees. Coat a 6 pan muffin tin with nonstick cooking spray. In a large bowl, use a fork to combine ground chicken with onion, mushrooms, red peppers, parsley and breadcrumbs. Add soy sauce, ketchup and egg, and mix well. Spoon the mixture into the muffin pan, filling each about half-full. Bake for 20-25 minutes, making sure that the internal temperature reaches 170 degrees. Two mini meatloaves is only 153 Calories and 17 grams of protein.
