Transcript:How to Make Low Fat Meringue Cookies
Hi I'm Cliff Wildman with About.com food. Today i'm going to show you how to make chocolate peppermint meringue cookies, they're crispy on the outside and chewy on the inside, but best of all they're fat free.Preparing to Make Low Fat Meringue Cookies
To start off you'll go ahead and preheat your oven to 250 degrees.Ingredients for Low Fat Meringue Cookies
For this recipe you'll need:- two tablespoons of cooca powder
- a half a cup of sugar
- two large egg whites
- a quarter teaspoon of cream of tartar
- a half teaspoon of peppermint extract
- and you'll need some salt, we'll use a pinch of it later
Instructions for Making Low Fat Meringue Cookies
In a small bowl, we're going to take a sifter and put the sugar and the cocoa in and sift those two ingredients together really well together. This is very fast, if you dont have a sifter you can go ahead and mix this in a bowl, but once you have it sifted together, grab a spoon and mix that together one more time to mix the ingredients well and then you can set aside.In a large bowl we'll take the egg whites, the cream of tartar and on top we'll add a pinch of salt. We're going to take an electric mixer, we want the batter to form soft peaks, you can see here we're almost there, it's gelling, and here's what it looks like when it is ready.
Now we're going to take the cocoa and the sugar we set aside earlier. We just want to spoon in a bit at a time, when you have about a tablespoon go ahead and mix into the batter, once the cocoa is all absorbed go ahead and add another tablespoon, mix and add until it looks like this. All the cocoa is in the batter, so we just need to add our last ingredient, the peppermint extract and we want to mix that together really really well. Make sure the extract gets into the batter fully.
So now we're going to take a cookie sheet and we want to put a piece of parchment paper on top. then take a tablespoon and dollop out the batter onto the paper. You want to make them an inch to an inch and a half wide you can play with the size a bit. as you see i have a few larger ones there at the end.
I'm going to cut the edges off the parchemnt paper to make sure they dont burn in the oven and we're ready to go.
Once the oven is preheated to 250 degrees we'll put the cookies in and bake them for an hour. Now, once that hour is up you want to turn the oven off and open the door for an hour, but two is better and then you're done. Here they are plated. This is a great tasty and simple fat free recipe.
