Hi, I’m Chef Michelle Karam with Dishes By Michelle, in Los Angeles, California, for About.com. I’m here today to share with you my recipe for chicken breast, which is not fried, fried chicken!Ingredients for Cooking Chicken Breast
The ingredients for this recipe are:- 1 egg, beaten, with 2 tablespoons of water added to it
- Chicken Fry or flour with seasoning added to it
- 2 chicken breasts which are boneless, skinless
- and a tablespoon and a half of canola oil or olive oil

This recipe is great if you’re looking for fried chicken, but don’t want all those added calories of the guilt of frying it, so I’ve come up with this perfect recipe which gives the perfect solution for not fried, fried chicken!Steps for Cooking a Chicken Breast
The first thing I’m going to do is spray my pan with some non-stick cooking spray. We’re going to take our chicken and we’re going to place it inside of the egg wash, and make sure that each side is evenly coated with the egg. We’re then going to dredge our chicken breast on either side, coating it carefully, and thoroughly, with the Chicken Fry or the flour mixture, making sure that you coat it very well. Dust off any excess.Now I’m going to put it in my pan, and I’m going to repeat the same step with the next chicken breast. I’m going to dip it in the egg wash again, and then dredge it on both sides, with the flour mixture. Always remember, when working with chicken or any sort of poultry, wash your hands thoroughly with warm water and soap, to make sure that you don’t have any cross-contamination. And just like the last piece, I’m just going to go ahead and lay it in my pan. And then this is where we add the little bit of guilt part to it, but far less than you would with traditional fried chicken. We’re just going to take our olive oil or canola oil, whichever you prefer, and go ahead and just drizzle a little bit on top.
Cooking Chicken Breast
So you’re going to pop these in the oven now on 350 degrees for 20-30 minutes, depending on the thickness of the chicken breast. And I kid you not when I say these are going to be just as crisp and juicy as they would be if you put them in the deep fat fryer. So here we have our no fry, fried chicken breast, which is crispy, juicy, moist, and really allows you to go for those extra calories, if you want that baked potato with sour cream and chives, it’s gonna give you that room to do it.
