Almond meal is commonly used in low carb baking as a substitute for flour because it's low in carbohydrates and high in protein. In fact, almond meal is sometimes called almond flour, and the two are basically the same thing - just finely-ground almonds.

The difference is almond flour is usually made with blanched almonds (that is, those without the skins), while almond meal can be made with either blanched or whole almonds You can make your own almond meal simply by grinding the almonds in a food processor or you can buy it. Many health food stores sell almond meal or almond flour.

Tips for Cooking With Almond Meal

You might need to use more eggs when baking with almond meal. They help hold the recipe together. Almond meal is not good for recipes that would normally be made with a yeast dough, like homemade bread. But it's great for recipes like cookies, muffins and quick breads, pie crusts and more.
