Transcript:Low Carb Grilled Eggplant

Hi, I’m Roblé for About.com. Today I’m going to show you how to make Grilled Eggplant which is high in flavor yet low in carbs. Here we go.

Ingredients for Low-Carb Grilled Eggplant

Here are our ingredients.
  • 2 tsp. minced garlic
  • 1 lg. eggplant
  • blended olive oil
  • kosher salt
  • black pepper

Cut the Eggplant

So, here we have our eggplant. The first thing that we want to do is to remove the tip. Now we are going to cut down the entire length of the eggplant about half of an inch between each slice. Very carefully remove the tip of the end slice and you have another usable slice. You can grill them off as halves or rounds. I prefer halves. Cut them right down the middle into halves. You see here I have two stacks. Cut right through one....and two. Now I have nice half moons.

Oil and Season the Eggplant

Next we want to combine the garlic and two tablespoons of blended oil. Take this and brush it over both sides of the eggplant with a pastry brush. Next, season both sides with salt and pepper.

Grill the Eggplant

Here we have a screaming hot grill pan. I’m going to put as much eggplant as I can on the pan without over crowding it. Cook them for about 1 1/2 minutes on each side. Make sure that you don’t overcook the eggplant as it will get very mushy.
