For this recipe you will need:- 2 cups cooked chicken
- onion
- 1 small green pepper
- 1 small can of mushrooms
- 2 tablespoons oil
- 1/4 teaspoon black pepper
- 6 tablespoons flour
- 1 cup milk
- 1/2 cup cream
- 1 1/4 cups chicken stock
- 4 oz jar chopped pimentos
- salt
- pepper
Cut the Vegetables
First, prepare the vegetables. Cut off the ends of the onion. Peel off the outer layer. Then, make cuts into the onion and dice it so you have about 1/4 cup.Next, chop the green pepper in half. Remove the seeds. Then, cut it into strips and then small pieces. Open and drain the can of mushrooms. Also drain the pimentos.
Cook the Vegetables
In a frying pan, heat the oil and sauté the onion for 2-3 minutes. Next, add the green pepper and mushrooms. Sauté all of the vegetables for another 3-4 minutes until the peppers are soft.Mix the Chicken a la King Seasoning
Next, add black pepper to season the vegetables. Now add the flour to thicken the mixture. You can also substitute half of the flour for a low carb alternative thickening agent. You'll add that with the liquids later on. Mix the flour with the cooked vegetables for another 2 minutes.Now add the milk, cream, chicken stock and some of the salt. Bring the mixture to a simmer and cook for 3-4 minutes.
Cook the Low Carb Chicken a la King
