Transcript:Low Carb Grilled Zucchini and SquashHi, I'm Roble for About.com. Today we are going to make a very easy side dish - grilled zucchini and squash Here we go.
Low Carb Grilled Zucchini and Squash IngredientsHere are our ingredients:
- 1 pound zucchini
- 1 pound squash
- kosher salt
- black pepper
- blended olive oil
Cut the SquashFirst we want to take our squash and cut off the tip diagonally. Continue to cut down the length of this squash about a half of an inch thick. I'm going to trim off this little bit right here and kind of flattened out the edge here. Now we are going to repeat the same process on the zucchini.
Grill the SquashHere we have our squash and zucchini laid out on a little cookie sheet or half sheet tray. Season it on both sides with oil, salt and pepper. Make sure you coat the entire surface with oil. Here we have a very hot grill pan over high heat. Start putting the zucchini and squash right-once here. We want to cook these for two minutes on each side and give them a flip. We do not want to overcook them. We want them to still have a little bit of bite to them when they are cooked. We do not want them to be mushy. Okay, so now we are going to give him a little flip. They have some pretty nice grill marks on them. Let it cook for another minute and 1/2 to 2 minutes. Repeat this process until you have cooked all of your zucchini and squash.
