Hi, I’m Roblé for About.com. Today I’m going to show you how to make Blackened Catfish. Along with that, to blacken the catfish, we are going to learn how to make a Cajun spice rub. Here we go.Ingredients for Blackened Catfish
Here are our ingredients.- 1 catfish fillet
- 2 tablespoons paprika
- 1 tablespoon dried thyme
- 1 tablespoon granulated garlic
- 1 teaspoon cayenne pepper
- 1 tablespoon coriander
- 2 teaspoons of fresh cracked black pepper
- 2 teaspoons kosher salt
- blended olive oil
Create the Cajun Spice Mix
First, you want to combine all of your dry ingredients inside of a bowl. Take a fork and mix them all together until fully incorporated. Here is your Cajun spice mix. You are going to want to move this into a smaller container.Coat Catfish in Cajun Spice Mix
So, here is our catfish fillet. We are going to take some of our Cajun spice mix and sprinkle it all over the top of the fillet. You want a light and even coating. Once you get a nice even coating, take your hand and pat it right in. Let this sit for at least five minutes before you start cooking.Sear Catfish in Cast Iron Pan
Here we have a screaming hot cast iron pan. Don’t try this in any other pan but a cast iron pan. It is the only type of pan that can truly blacken catfish. The drizzle and a little bit of oil. It smokes immediately. Now let’s drop the fish right into the pan. We are going to sear this fish for about 30 seconds on each side. If you have a larger fillet it may take longer. Just make sure that the fish is cooked all the way through.Here is your low-carb blackened catfish. Go ahead and serve that with your favorite low-carb salad and/or vegetables.
