Hi, I'm Nutrition and Fitness Expert JJ Virgin of JJVirgin.com and I'm here today with About.com to share with you some of my favorite low-carb veggies, and more importantly, some great delicious things you can do with them.
Cauliflower Is a Great Low-Carb Vegetable for Mashing
First thing I'm going to share with you is cauliflower. Now, if you love mashed potatoes, you know those don't belong on a low carb diet. But you can do the same thing with a cauliflower, if you just steam it, and then mash it just like you would mashed potatoes -- it tastes delicious. You can also roast cauliflower.
Brussels Sprouts, Zucchini and Eggplant Are Low-Carb Vegetables for Roasting
Some of my favorite things to roast are brussel sprouts -- chop them up into quarters -- zucchini, and eggplant. What I do is I finely chop all these into little chunks and then I toss in either some coconut oil or some olive oil, and toss them with sea salt. Put it in the oven at 400 degrees, roast for about 20-30 minutes, check on them, flip them, and then roast for another 20 minutes until your desired degree of doneness. I like them a little crunchy and crispy. And they are so good. After you're done roasting them, if you really want something special, try putting on some red coconut curry sauce on top. This is a great low carb treat -- delicious!
Make Fake Pizza With Portobella Mushrooms, a Good Low-Carb Vegetable
If you're a pizza fan, obviously pizzas are kind of like mashed potatoes -- they have no place on a low-carb diet, but you can make fake pizza with portabellas. All you do is take portabellas, add a little marinara sauce, top it with some mozzarella cheese, or some goat cheese or some feta cheese, and bake those in the oven and they are delicious.
Low-Carb Vegetables Can Be Substitutes for Chips
And finally, if you want some chips -- get rid of the chips, instead try some red pepper, celery, cucumbers, and you can either use guacamole, or salsa, or a combo of both, as your dip. Again, another great low-carb treat -- this is a wonderful thing to keep in the refrigerator because you know we're always trying to get our vegetable intake up. You should be eating 5-10 servings of non-starchy vegetables a day, and you really want to eat from the rainbow of colors.
Spaghetti Squash Is a Low-Carb Vegetable Substitute for Pasta
Now, one last little area for low-carb dieters that's always sort of painful is giving up the pasta. And I'm happy to tell you, you don't have to. All you need to do is trade that pasta for spaghetti squash. And this is really easy to prepare. My favorite way to do this is just to slice it in half -- that's the hardest part -- put it in the oven and bake it at 350 until it gets soft. And then you take a fork and you just shred it and it comes off like little pasta strips. Throw on some olive oil and basil, or throw on some marinara sauce and you've got a great pasta dish without all that starch.
