Transcript:Low Carb Saffron Chicken with Almonds

Hi, I'm Roble for About.com. Today I'm going to show you how to make saffron chicken with toasted almonds. Here we go. Low Carb Saffron Chicken Ingredients Here are our ingredients:
  • 2 8 ounce chicken breasts
  • 1/4 cup slivered almonds
  • 1 tablespoon Spanish paprika
  • 1 teaspoon granulated garlic
  • kosher salt
  • black pepper
  • blended olive oil
  • 1 pinch saffron

All About Saffron

Saffron is the most expensive spice in the entire world. Why is it so expensive? Well, it is the stigma or the inner little thready part of a flower called the autumn crocus. It is mostly harvested in Spain. It takes 70,000 of these flowers to make 1 pound of saffron.

Coat the Chicken

The first thing that we want to do is to take our chicken and treatment of any excess fat or gristle. Here we have our two portions of cleaned chicken. So, right into a bowl we want to place our chicken. Drizzle in a tablespoon or so of olive oil. now we want to add in our garlic powder, paprika, saffron and one nice pinch of salt. Next, you want to get in there with your hand and mix it all around very well. We want to coat the chicken with the spices and oil.

Toast the Almonds

Okay, so next we are going to toast our almonds. Here I had a screaming hot sauté pan. I'm going to add the almonds right into the pan. Now I'm going to toss them around. I can already smell the toasting. Keep moving these around. They are getting some color and becoming very fragrant. It takes about 30 to 40 seconds or so and they are finished. They are nicely toasted and I will place them right into a bowl.

Cook the Low Carb Chicken

Now for our chicken. I had a sauté pan over medium heat. I'm going to drizzle and a little bit of oil. Next, I'm going to add in the two pieces of chicken. I will let them slowly cook in the oil. Let's turn the heat down to low. Let's cook them for five minutes on each side over low heat. So, five minutes later let's flip these over and seer these on the over low heat. Let's let them cook from the bottom up slowly. All the way through. So, after another five minutes are chicken is done. Let's remove it from the heat. Here is our chicken.

You can serve it with your favorite low carb salad. You want to just top it off with a little bit of these toasted almonds.
