Transcript:Low Carb French Onion SoupHi, I’m Roblé for About.com. Today I’m going to show you how to make a low-carb version of french onion soup. Here we go.
Ingredients for Low Carb French Onion SoupHere are our ingredients.
- 2 quarts hot beef stock/broth
- 1 1/2 pounds onions sliced thin
- 3 cups salad croutons
- 2 cups Gruyere cheese space (shredded)
- 2 ounces unsalted butter
- kosher salt
- black pepper
Caramelize OnionsHere we have a large sauté pan over medium heat. Take your butter and add it right in. Let the butter melt. Once the butter is melted we are going to add in the onions. Now we are going to caramelize the onions. Season the onions with kosher salt and plenty of black pepper. Now that the onions are seasoned we are going to turn the heat down to medium. You don’t want to move these around too much. We are going to let these brown on the bottom and then give them a nice little stir or a toss. Keep repeating that process every 3 to 4 minutes and the onions will start to caramelize. They will start to get sweeter and develop flavor.
So, the onions are starting to brown on the bottom as you can see. That’s when you want to move them around just like this. Go ahead and toss these around. It’s beautiful. Now we are going to start getting some color. Just keep doing that every few minutes until it’s brown all around and caramelized. So, this right here is the color that you are looking for. You will see on the bottom of the pan..... See all of that down there? Looks burnt, doesn’t it? But no, that’s flavor. The way to get that flavor off of the bottom of the pan is to take this 8 ounce ladle and fill it up halfway (4 oz.) with beef stock and de-glaze the pan. Turn the heat up to high.
Simmer the SoupJust swirl everything around the bottom of the pan, picking up all those little bits and pieces off of the bottom of the pan. Here we have a pot over medium-high heat. You will notice that all of our stock is in the pot boiling. Go ahead and put your caramelized onions in the pot as well. Turn the heat down to low. Cover the pot. Let it come back up to a simmer. Let it simmer for 15 minutes or until the onions are nice and tender. We are now done simmering our soup. You can turn off the heat.
Add Cheese and Serve Your Low Carb French Onion SoupNext, you want to come in here with a ladle and give it a nice stir around. Here we have a bowl. We are going to go ahead and place a couple of ladles the soup into this bowl. Make sure you don’t put too many onions in there. It should be mostly broth. Next we want to take our croutons. Go ahead and sprinkle a few of these on the top, covering the surface. Just like that. Here is our cheese. Go ahead and sprinkle cheese all over the top making sure that you distribute it evenly. We are going to put this into a 350° oven or a broiler until the cheese is nicely browned.
