I'm Jenna Blackwell for About.com Food and this is one of America's most popular dinner dishes – meatloaf. Now I love meatloaf, especially smothered in gravy. But a fully decked out piece of this tasty dish can deliver 350 calories and 22 grams of total fat! So today I'm going to show you how to make a low calorie mini meatloaf that will satisfy your taste buds but with half the calories and a quarter of the fat.

Mini Meatloaf Recipe Ingredients

The ingredients you'll need are:
  • 1 pound of extra-lean ground beef
  • 1 medium shredded carrot
  • 1/2 yellow onion, finely chopped
  • 1 tbsp chili powder
  • 2 tbsp Worcestershire sauce
  • 1 slice whole grain bread as breadcrumbs
  • 2 egg whites
  • 1/3 cup tomato ketchup
Preheat oven to 400 degrees. Lightly spray a muffin pan with nonstick cooking spray.

Mix the Meatloaf Ingredients

Crumble the ground beef into a large bowl. Add the shredded carrots and the chopped onion. Stir in the chili powder, Worcestershire sauce and breadcrumbs. Add the egg whites and stir again with a fork until well blended.

Form the Mini Meatloaf

You can knead the mixture with your hands but sometimes this makes the meat really tough. Spoon the mixture into the muffin pan, and top each loaf with ketchup.

Bake the Meatloaf

Bake for 25 minutes, making sure that the internal temperature reaches 165 degrees.

Serving Mini Meatloaf
